Pork cutlets with balsamic-glazed apples and skin-on mashed potatoes.

Interesting. How does one go about a balsamic glaze for apples?

Yeah, I'm kind of curious about that as well. Maybe baked in balsamic vinegar?

Maybe pickled in it. Then placed on the meat during prep.

I actually had pork chops this evening as well. Sous vide for 24 hours in butter, garlic, rosemary thyme, other green spices. Pulled them out of the bag, dried them up, scorched 'em up in a fry pan. Pretty darn good as well. Nice thick ones too (2" thick, and done all the way through) Think I will try brining them next time though, as they finished a bit dry for my taste this time.

Now I really feel inferior. All this good food being posted. All I could come up with was Veal and Steak mix hamburgers. Cooked on the grill to an easy medium rare. Smothered in seasoned sauteed onions. Served on Onion rolls.

After you cook the pork in a pan, cook the apples so in there in the juices until they get tender. Take them out and throw balsamic vinegar, brown sugar, and chicken stock in there and cook it down until it's "viscous," like 5-7 min on medium. Once it's ready just throw the apples back in there and get them coated, then serve that over the pork.

Very interesting, sounds tangy, sweet, and savory.

Pretty much. I should note that the glaze smells like butt for the first few minutes as the vinegar itself is cooked off.
